Olives grow on olive trees (Olea europaea). They are very high in Vitamin E and other strong
antioxidants. Olives have been consumed by humans for thousands of years, long before the
canning industry, grocery shops, and martinis were invented.
Whether minced into spreads and tapenades, put into salads, cooked in stews and sauces,
dumped into martinis, or eaten straight out of hand, olives are amazingly diverse and equally
flexible. Their varied flavors of sweet, sour, salty, bitter, and pungent make them an
indispensable tool in any home cook’s armory.
